There is no further skin maceration. The juice settles naturally for 12 hours before being gravity-fed into older wooden fermenters, where it undergoes a spontaneous fermentation with indigenous wild yeasts. Fermentation takes place slowly with gentle oxygen ingress, without imparting oak aromas. The wine is then left on fine lees to build complexity before bottling.
