The name COS comes from the initials of their surnames. Starting with grapes from their parents' vineyards, the trio set out to revive Cerasuolo di Vittoria, a blend of Nero d'Avola and Frappato that had become somewhat overlooked.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eOver the years, COS moved away from oak towards cement and eventually amphora, searching for a more aromatic and expressive style of wine. Their pioneering work helped put Vittoria firmly on the wine map, with Cerasuolo di Vittoria achieving DOCG status in 2005.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe vineyards sit at around 230m above sea level on south-east-facing red soils formed from Pliocene sub-Apennine sands, with limestone, silica, clay and tufa.
