Franz is a big believer in getting everything you can out of the soils that the vines grown on, so he uses strictly organic and biodynamic practices. He views the soil as the origin of the wines, the fermentation the birth and the ageing in the cellar as the education of the wines. He uses biodynamic preparations and homeopathic teas to harvest healthy and vibrant grapes. Grapes are taken from South facing vineyards in Ritzing, Burgenland, a field blend of Merlot, Cabernet Sauvignon and Sankt Laurent. Hand harvest, natural fermentation in cement tanks. Aged in a mix of cemenet and wood barrels , unfined and unfiltered.
This wine is full of bright fruit and floral notes with minerals on the palate showcasing the soils the grapes come from. Cherries and plums with a super long finish.
