Vincent is the 5th generation of winemakers from the Caille family who run the family estate, Domaine La Fay d'Homme. All the vineyards are organically certified with a heavy focus on being eco-friendly. They are South West facing and exposed to high winds which creates perfect growing conditions on the limey soils. Hand harvested Chenin Blanc, Melon de Bougogne and Folie Blanche grapes are crushed and cold settled before fermenting at very low temperatures in stainless steel vats. The wine is aged on it's fine lees for 4 months before settling. Minimal sulhpur is added to the wine.
It's all about freshness with this Muscadet. Dry and powerful notes of lemons, peaches and topical fruits. A classic Muscadet salinity to it giving it amazing structure. A beauty!
