Wine making: Grapes are harvested and vinified separately in clay amphorae with a mix of skin contact, oaking and stainless steel wine techniques used to get the most out of each variety. Unfined and unfiltered with a very small amount of sulphur added.
Citurs peel and stone fruit aromas, with a light, soify and grippy palate. Hazy and pale orange.
Situated on a slope leading down to the Tillingham River and ran by Ben Walgate, Tillingham is producing some really exciting natural wines. Organic and biodynamic practices are used in the vineyard with poly-culture farming taking place as well. Chalk and clay soils in vineyards that are some of the sunniest in the UK.
