Type: Sparkling Cider made with grape skins
Fruit: Apples, grape pomace of Petr Marada Frankovka grapes.
Vinification: Apples pressed in autumn and slowly fermented in old oak barrels into dry cider (12 months in total). Then they spend 7 days in open top vats macerating on the fresh grape skins. Freshly pressed apple juice is added to start the second fermentation in the bottle. Unfined, unfiltered and no added SO2.
Utopia Cider is ran by husband and wife Ivo and Eva. They moved to the Moravian highlands in 2013 where they bought and old farm to start to producing cider. They work with Czech varieties of apple from several sources of up to 80 year old trees. All of the cider is fermented with natural yeasts in 225 litr oak barrels with no added sulfur. The cider ferments to dry through the autumn through to spring and then in summer malolactic fermentation occurs adding complexity and balancing the acidic flavours. The ciders are bottled unfined and unfiltered.
