Vinification
A very special Chardonnay born from the frost-hit 2021 vintage. Severe spring frosts dramatically reduced yields across the Jura, so Jean-François Ganevat brought together Chardonnay from different parcels across the Domaine and a variety of terroirs to create this cuvée.
Fermented with indigenous yeasts and aged for an extraordinary four years on the lees in demi-muids, with no intervention and no added SO₂. The long élevage gives the wine serious depth and texture while retaining the freshness and mineral energy of the 2021 vintage.
A beautifully concentrated and complex Jura Chardonnay, with ripe orchard fruit, citrus, white flowers and subtle nutty and mineral notes. The palate is broad and textured but driven by bright acidity, with a distinctive saline, mineral finish.
Domaine Ganevat is one of the Jura's most sought-after natural wine producers, based in Rotalier. Jean-François Ganevat farms with a biodynamic and low-intervention approach, allowing the character of individual sites and old vines to come through with as little manipulation as possible.
Les Survivants is particularly unusual. The devastating frosts of 2021 left only small quantities of Chardonnay across the Domaine, so the surviving fruit from different parcels and terroirs was brought together into one cuvée. Hence the name: Les Survivants, "the survivors."
The result is a rare, deeply expressive Jura Chardonnay with a combination of concentration, texture, freshness and saline minerality. A seriously special bottle for Jura fans and lovers of naturally made Chardonnay.
