Vinification
A juicy, vibrant red made from a blend of Gamay from Fleurie and Pinot Noir from Alsace. The grapes undergo a cold semi-carbonic maceration, bringing plenty of fresh fruit, aromatic lift and that wonderfully crunchy character associated with naturally made Gamay.
The wine is then aged for 10 months in a truncated-cone wooden vat, allowing the fruit to remain at the forefront while adding a little extra texture and depth. Fermented with indigenous yeasts, bottled unfiltered and with no added sulphur.
Bright, juicy and seriously drinkable, with flavours of red cherry, wild strawberry, raspberry and juicy plum, alongside a gentle savoury edge and subtle spice. Light on its feet but with enough structure to make it interesting, this is the kind of bottle that disappears remarkably quickly.

Domaine Ganevat is one of the Jura's most sought-after natural wine producers, based in Rotalier. Jean-François Ganevat farms with a biodynamic and low-intervention approach, allowing the character of individual sites and old vines to come through with as little manipulation as possible.
