Viticulture: Organic Farming / Natural Winemaking
Vinification: Hand-harvested grapes are slow-pressed directly and fermented ambiently with 60% whole bunch grapes before being aged for nine months on lees. Bottled unfined, unfiltered with no added sulphur.
Light, aromatic and fresh. Lime, pepper, fresh apples along with floral notes.
Andi Knauss is a fourth generation winemaker, learning his trade with his father at their family estate in Remstal. Andi has slowly moved the estate to organic practices and now has over 15 hectares of vineyards in Sturmpfellbach. Terroir is limestone and Marl with altitude up to 400 m above sea level above the river Rems.
