Vinification: Hand-harvested. Fermented with 60% whole bunches layered with 40% destemmed fruit. Semi-carbonic maceration for 3 weeks to enhance aromatics and texture. Pressed and aged in second-fill 500L Stockinger oak barrels and fibreglass vats for balance and purity.
Deep cherry colour with dark fruit intensity. Notes of damson, ripe black cherry, and wild berries layered with savoury hints of leather and forest floor. Structured yet juicy, with present but fine tannins and a smooth, earthy finish. Best served at cellar temperature (14–18°C).
