Vinification: Hand-harvested. Pre-fermentation cold maceration to enhance aromatics and texture, followed by fermentation in stainless steel tanks using indigenous yeasts. Cold stabilised and lightly filtered with vegan-friendly fining methods to preserve freshness, purity and varietal expression.
