Viticulture: Biodynamic farming 

Vinification: Manual harvest, wild yeast fermentation, aged in stainless steel tank for 9 months on lees. 36 month maturation on lattes and tops. Unfined and unfiltered.

Plenty of fruity notes of white fleshed fruit and develops into lightly toasted brioche and nutty character. Long palate but plenty of freshness and elegance. 

Champagne Eric Taillet is a family estate in Baslieux-sous-Châtillon in the Belval Valley, spanning 6 hectares planted mainly with Meunier, alongside small amounts of Chardonnay, Pinot Noir, and rare varieties. Founded in 1956, the domaine has been led by fourth-generation winemaker Eric Taillet since 1995, who favors sustainable, low-intervention methods that let Meunier express itself fully. He now works with his children, Dylan and Léna.

The vines average around 45 years old. The estate follows an organic-minded approach, focused on soil life and biodiversity. Treatments are kept to a minimum, using organic and biodynamic methods, with HVE and VDC certifications. Rather than full organic certification, the domaine values flexibility to adapt practices—especially for Meunier—and has introduced vitiforestry by planting trees among the vines.
