Vinification
The grapes are manually harvested from the end of September through to early October before undergoing fermentation on their skins with ambient indigenous yeasts.
The wine is then aged in cement tanks and bottle, allowing the bright, aromatic character of Frappato to shine through. It is filtered to 2 micron, not fined, with only minimal sulphur added at racking and bottling.
Tasting note and best served with:
Light ruby in colour, with a pretty perfume of wild flowers, red berry blossom and herbal spice. The palate is fresh and vibrant, showing flavours of raspberry, orange peel and sweet spice, with subtle acidity and soft tannins.
Producer and terroir information:
Azienda Agricola COS was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti and Cirino Strange. The name COS comes from the initials of their surnames. Starting with grapes from their parents' vineyards, the trio set out to revive Cerasuolo di Vittoria, a blend of Nero d'Avola and Frappato that had become somewhat overlooked.
Over the years, COS moved away from oak towards cement and eventually amphora, searching for a more aromatic and expressive style of wine. Their pioneering work helped put Vittoria firmly on the wine map, with Cerasuolo di Vittoria achieving DOCG status in 2005.
The vineyards sit at around 230m above sea level on south-east-facing red soils formed from Pliocene sub-Apennine sands, with limestone, silica, clay and tufa. The Mediterranean climate is relatively mild, while the vines average around 15 years old and are trained using Guyot and trellis systems.
