Viticulture: Organic farming methods. Fruit is sourced from two hectares of hillside vineyards in the San Luigi area of Dogliani, where Dolcetto reaches its finest expression. Planted on clay-limestone marl soils at 350 metres above sea level with south and west-facing aspects, the vineyards benefit from cold, snowy winters and warm, dry summers, allowing for slow, even ripening and vibrant fruit character.
Grapes: 100% Dolcetto
Vinification: Hand-harvested and fully destemmed before seven days of maceration. Fermented with indigenous yeasts in a combination of stainless steel and concrete tanks at ambient temperatures, followed by natural malolactic fermentation. Aged in concrete for three months before bottling in December. Unfiltered to preserve purity, texture and the authentic character of the fruit.

The palate is juicy and vibrant, balancing ripe fruit with refreshing acidity, soft tannins and a smooth, dry finish. Nicholas Altare represents a new generation of talented Piedmont winemakers dedicated to showcasing the authentic character of Dogliani. After learning his craft alongside renowned Barolo producer Ferdinando Principiano, Nicholas bottled his first wines in 2016 using fruit from his family's historic vineyards. A year later, he completed his own winery, where he now produces a small range of handcrafted Dolcetto, Nebbiolo and Barbera.
Situated in the heart of the Dogliani appellation, the family's vineyards sit on classic clay-limestone marl soils that are perfectly suited to Dolcetto, producing wines with bright fruit, freshness and remarkable drinkability. Organic farming, indigenous yeasts, concrete ageing and minimal intervention in the cellar allow the vineyard to take centre stage, resulting in a pure expression of one of Piedmont's most traditional grape varieties.
