Vinification

A seriously distinctive Jura maceration wine made from old-vine Chardonnay and Savagnin, planted on the grey Liassic marl soils typical of the Jura.

The grapes are given a lengthy 7-week maceration on their skins, bringing colour, tannin and plenty of texture to the wine. Fermentation and ageing take place naturally in demi-muids for an extraordinary six years, with indigenous yeasts and virtually no intervention.

Unfined, unfiltered and with no added sulphur, this is a raw, deeply expressive Jura wine that has had plenty of time to develop in the cellar.

Tasting note and best served with:

Rich, textured and intensely aromatic, with layers of dried apricot, orange peel, bruised apple, spice and nuts, alongside savoury, earthy and gently oxidative notes. The extended skin contact gives the wine a firm, grippy texture, while the six years of élevage bring remarkable complexity and depth.

This is an orange wine for serious food. Try it with Comté, aged cheeses, roast poultry, pork, mushrooms, Middle Eastern spices or rich vegetarian dishes. It can also handle strongly flavoured Asian cuisine surprisingly well.

Domaine Ganevat is one of the Jura's most celebrated natural wine producers. Based in Rotalier, Jean-François Ganevat has become renowned for his incredibly detailed, low-intervention wines, working with both estate fruit and négociant grapes.

L’Eau d’Range is a particularly fascinating example of the Domaine's approach. The Chardonnay and Savagnin come from old vines rooted in grey Liassic marl, one of the defining geological features of the Jura. Rather than stripping away the character of the fruit, Ganevat allows the wine to evolve naturally through extended skin contact and a remarkably long six-year élevage.
