Zero Sulphur sparkling made by the Ancestral method which actually dates back to a long time ago despite Pet Nat being so trendy right now. The bottle is closed with a crown cap during the first fermentation resulting in CO2 dissolving in the wine until it is popped. It's hazy as the dead yeast cells are left inside the bottle which adds lots of texture and savoury notes to the wine.
This Rose Pet Nat from Domaine Chateau Le Roc is fresh and delicate, lightly fizzed with lots of ripe red fruits and citrus.
