Viticulture: Regeneratively farmed. The Mourvèdre vines are dry-farmed, windswept and low-yielding, producing just 5 tonnes per hectare. Waterkloof's focus on living soils and a natural approach to viticulture allows the character of the vineyard, including its soil, aspect, altitude and vintage, to shine through.
Grapes: 100% Mourvèdre
Vinification: The grapes are hand-harvested before being gently whole-bunch pressed in a horizontal basket press, extracting only the finest juice. There is no further skin maceration. The juice settles naturally for 12 hours before being gravity-fed into older wooden fermenters, where it undergoes a spontaneous fermentation with indigenous wild yeasts. Fermentation takes place slowly with gentle oxygen ingress, without imparting oak aromas. The wine is then left on fine lees to build complexity before bottling. Unfined and lightly filtered, with only a small addition of sulphur before bottling.

A beautifully pale and delicate rosé with aromas of pomegranate, raspberry and a distinctive flinty character. The palate is elegant and finely textured, with soft strawberry and red fruit flavours alongside a gentle silky texture and bright, lingering acidity.
