Vinification
A seriously fun take on Pinot Meunier from Ham Street Wines. This started life as a barrel of Pinot Meunier destined for a traditional-method sparkling wine, but after 10 months ageing in barrel, the wine had developed so much character that Lucie and Jules decided to take it in a different direction.
The wine was refermented in bottle using the Col Fondo method, leaving it lightly sparkling and resting on its lees. The result is a textured, juicy and characterful English sparkling red-fruited wine with plenty of freshness and a long, moreish finish.
Tasting note:
Lightly sparkling, juicy and full of red berry fruit, with a distinctive aromatic character and a lovely mineral freshness. The palate has plenty of texture from the time in barrel and lees, while the gentle fizz keeps everything lifted and incredibly drinkable.
Producer and terroir information:
Ham Street Wines is the project of Lucie Swiestowska and Jules Phillips, who planted their vineyard on the edge of the Romney Marsh in Kent. The estate covers around four hectares, with more than 16,000 vines planted across varieties including Pinot Meunier, Pinot Noir, Chardonnay, Bacchus and Pinot Gris.
The couple farm with a strong focus on regenerative agriculture and soil health, achieving biodynamic certification in 2024. In the winery, their approach is similarly hands-off, with small-batch wines designed to reflect the fruit and vintage rather than being overly manipulated.
