Winemaking: Manual harvested grapes are macerated for 14 days without pumping over or punching dow. Fermented in stainless steel with indigenous yeast. Aged in stainless steel tanks and amphora for 10 months. Unfiltered, unfined, No So2 added.

Julien has been passionate about wine from a very young age and it was always his dream job. His father is a farmer and had given him a taste of working with the land, and how to respect it. Julien achieved his dreams at the age of 21 by buying his first vines in 2003 (Pupillin, cote de caillot). At that time, alongside his new job as a winemaker, he also gave piano lessons in order to live. 2003 was a complicated year with frozen vines in 2003 and really low yields. He now works 5ha organically and has been in conversion to biodynamics since 2012. Each of his wines has a vineyard name.
