Vinification: Manual harvest, grapes pressed in an old, horizontal Vasline 'pressoir a vis' (screw press). Natural yeast fermentation in resin vats for two weeks. 11-12 months less ageing.
Salty, aromatic, citrus. No oak but amazing structure and complexity.
Thierry is a third-generation winemaker who tends 13 hectares of vineyards, primarily planted with old-vine Carignan, Grenache, and Syrah. He also cares for a small number of hectares dedicated to ancient and rare grape varieties—what he fondly refers to as "forgotten"—such as Terret, Grenache Gris, and Oeillades.
