Wine making: Manual harvested grapes are gently pressed and cold settled. Native yeast fermentation in stainless steel for 6 weeks. Matured in concrete vats for 6 months with malolactic fermentation happening naturally. Filtered but unfined with small amounts of sulphur added.
Fresh green fruits and flowers with a round and complex palate. Long finish and perfect balance.
Domaine Les Hautes Terres vineyards are on clay soils containing sand-stone with high concentrates of sea fossils. The Chardonnay vines are planted on North facing slops at 400m-600m to enhance and retain their freshness and acidity.
