Winemaking: Grapes are hand harvested and crushed by foot. Fermented in plastic water tanks outside the winery. 40 days maceration before ambient fermentation. Aged in old French oak barrels for 8 months. Unfined, unfiltered and very small amount of sulphur added.
Light and juicy red with cherry notes. Very well balanced acidity and tannins with a long fresh finish.
Trying to get away from Malbec Pol came across this vineyard which is the only one in the Uco Valley to still be planted with these old Criolla varieties. The trunks are as thick as trees and the pergola-trained canopy is high overhead like a forest. Sandy soils and high altitude. They converted to organic 6 years ago.
