Viticulture: Organic Farming / Natural Wine
Vinification: Grapes are harvested by hand and destemmed. Fermented on skins with indigenous yeasts in Qvevri lined with beeswax. 3-4 months maceration minimum. Matured in Qvevri, MLC occurs, unfined and unfiltered.
Intense amber-hued wine with aromas of dried fruit, exotic oriental dry spice. Almost peachy with golden fruit and notes of wild mint and other herbs.
Founded in 2007 on the site of his great grandfather’s vineyard and typical Imeretian cellar in Nakhshirgele. Two white Georgian grape varieties are planted in Ramaz’s beautiful tiny wild vineyard: Tsitska and Tsolikouri. Natural winemaking methods are used in both the cellars and the vineyards and the qvevri are buried in the open air.
