Vinification: Hand picked grapes get sorted and naturally fermented in old, open-top french oak barrels. 8 month fermentation followed by a month on lees. The extended alcoholic fermentation ensures the juice is always in contact with gross lees, adding more complexity and weight. Only released on exceptional vintages. Can be aged for many years or decant before drinking.
Aromas of honey, white flowers and citrus. Lots of texture and great salinity. Rich and complex but super elegant.
